Tomato & Cream Cheese Cracker Bites

When you need a quick appetizer that looks beautiful without requiring hours in the kitchen, these Tomato & Cream Cheese Cracker Bites are an easy choice. Crisp crackers are topped with a smooth layer of creamy cheese, juicy tomato slices, fresh herbs, and a few simple seasonings. The result is a colorful bite-sized snack that combines creamy, crunchy, fresh, and savory flavors in every bite.

These little appetizers are especially useful when you’re hosting a gathering, preparing a holiday snack table, or simply want something quick to serve alongside drinks. They require very little cooking, and most of the preparation can be done ahead of time.

Why You’ll Love These Cracker Bites

There is something wonderfully satisfying about the contrast between a crisp cracker and a creamy topping. The cream cheese provides richness, while the tomato adds freshness and a subtle natural sweetness. Fresh herbs and seasonings bring everything together without overpowering the main ingredients.

Another advantage is how easy these bites are to customize. You can use different crackers, add a sprinkle of cheese, change the herbs, or introduce a little heat with red pepper flakes.

Ingredients

For approximately 20–24 cracker bites, you’ll need:

  • 20–24 sturdy crackers
  • 8 ounces cream cheese, softened
  • 2–3 medium ripe tomatoes
  • 1 tablespoon fresh chives, finely chopped
  • 1 tablespoon fresh basil, finely chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon salt, or to taste
  • 1 teaspoon olive oil
  • Optional: a small drizzle of balsamic glaze
  • Optional: red pepper flakes for a little heat

Choosing the Best Ingredients

For the best results, use tomatoes that are ripe but still firm. Very soft tomatoes contain more liquid and can make the crackers soggy.

A full-fat cream cheese gives the topping a particularly smooth and rich texture, but reduced-fat cream cheese can also work.

For the crackers, choose a variety that is sturdy enough to support the toppings. Round buttery crackers, whole-grain crackers, or simple savory crackers all work well.

Step 1: Soften the Cream Cheese

Take the cream cheese out of the refrigerator about 20–30 minutes before preparing the appetizer.

Place it in a mixing bowl and allow it to soften naturally at room temperature. Softening the cream cheese makes it much easier to spread without breaking the crackers.

Once softened, stir it with a spoon or spatula until smooth and creamy.

Step 2: Season the Cream Cheese

Add the garlic powder, black pepper, salt, and chopped chives to the softened cream cheese.

Mix everything thoroughly until the seasonings and herbs are evenly distributed.

Taste the mixture and adjust the seasoning if necessary. If you prefer a stronger garlic flavor, add a little more garlic powder. For a brighter herb flavor, add additional fresh chives or basil.

Step 3: Prepare the Tomatoes

Wash and dry the tomatoes thoroughly.

Using a sharp knife, cut them into thin slices. If the tomato slices are particularly large, cut them into smaller pieces that will fit comfortably on the crackers.

To help prevent soggy crackers, gently blot the cut tomatoes with a paper towel. This removes some of the excess moisture without taking away their fresh flavor.

Step 4: Prepare the Crackers

Arrange the crackers in a single layer on a large serving platter or tray.

Try to keep them close together so you can assemble the appetizers efficiently.

If you’re preparing these for a party, you can line the platter with parchment paper or a decorative serving liner for a cleaner presentation.
