How to Make Zucchini Snacking Cake
Step 1: Prepare the Zucchini
Start by washing and drying the zucchini thoroughly. Leave the skin on because it adds a little color and saves preparation time.
Grate the zucchini using the medium side of a box grater. You should have approximately 1 ½ cups of grated zucchini.
Place the grated zucchini in a clean kitchen towel or several layers of paper towel and gently squeeze it to remove some of the excess liquid.
