  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth or vegetable broth
  • 2 cups shredded cheddar cheese
  • ½ cup sour cream or cream cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika
  • ½ teaspoon mustard powder, optional
  • ¼ cup grated parmesan cheese, optional

For the Topping

  • ¾ cup breadcrumbs or crushed crackers
  • 2 tablespoons melted butter
  • ½ cup shredded cheddar cheese
  • 1 tablespoon chopped parsley, optional

Step 1: Prepare the Baking Dish

Preheat the oven to 375°F / 190°C.

Grease a 9×13 inch baking dish with butter or cooking spray. This prevents the casserole from sticking and makes serving easier.

Set the dish aside while you prepare the noodles, broccoli, and sauce.

Step 2: Cook the Noodles

Bring a large pot of salted water to a boil.

Add the noodles and cook them until they are just al dente. This means they should be cooked but still slightly firm. Do not overcook them, because they will continue cooking in the oven.

Once cooked, drain the noodles and set them aside.

A good tip is to toss the drained noodles with a small spoon of butter or oil so they do not stick together while you make the sauce.

Step 3: Prepare the Broccoli

Step 4: Make the Flavor Base

Place a large saucepan or skillet over medium heat.

Add the butter and let it melt. Add the chopped onion and cook for 3 to 4 minutes until softened.

Add the minced garlic and cook for another 30 seconds. Stir constantly so the garlic does not burn.

This onion and garlic base gives the casserole a deeper homemade flavor instead of tasting like plain cheese sauce.

Step 5: Make the Roux

Sprinkle the flour over the butter, onion, and garlic mixture.

Stir continuously for 1 to 2 minutes. The flour will absorb the butter and form a paste.

This step is called making a roux. It helps thicken the sauce and gives the casserole a creamy texture.
