Cheeseburger Biscuit Bombs: A Cheesy, Buttery Stuffed Biscuit Recipe
Cheeseburger Biscuit Bombs are warm, golden biscuit pockets filled with seasoned ground beef, melted cheese, and classic burger flavor. They taste like mini cheeseburgers wrapped inside soft, flaky biscuit dough. The outside bakes until buttery and golden, while the inside stays juicy, cheesy, and savory.
This recipe is perfect for family dinners, party appetizers, game-day snacks, lunch boxes, or quick weekend comfort food. They are easy to hold, fun to eat, and full of flavor in every bite.
What Are Cheeseburger Biscuit Bombs?
Cheeseburger Biscuit Bombs are made by cooking a simple cheeseburger-style beef filling, placing it inside biscuit dough, sealing the dough into balls, and baking them until golden brown. The filling usually includes ground beef, onion, garlic, ketchup, mustard, Worcestershire sauce, and cheese.
The result is a soft stuffed biscuit with the flavor of a cheeseburger hidden inside. They can be served plain or with dipping sauces like burger sauce, ketchup, ranch, barbecue sauce, or spicy mayo.
Ingredients
For the Beef Filling
- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon oil or butter
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 tablespoon Worcestershire sauce
- 2 tablespoons ketchup
- 1 tablespoon mustard
- ½ cup diced pickles, optional
- 1 cup shredded cheddar cheese or small cheese cubes
For the Biscuit Bombs
- 1 can refrigerated biscuit dough, usually 8 large biscuits
- 1 cup shredded cheddar, mozzarella, or American cheese pieces
- 2 tablespoons melted butter
- ½ teaspoon garlic powder
- 1 tablespoon chopped parsley
- Sesame seeds, optional
For Serving
- Ketchup
- Burger sauce
- Ranch dressing
- Barbecue sauce
- Honey mustard
- Spicy mayo
Step 1: Prepare the Beef Filling
Place a skillet over medium heat and add oil or butter. Once hot, add the chopped onion and cook for 2 to 3 minutes until it softens.
Add the minced garlic and stir for about 30 seconds. Garlic burns quickly, so keep it moving in the pan.
Add the ground beef and break it apart with a spoon. Cook until the beef is browned and no pink remains.
Drain extra grease from the skillet so the biscuit bombs do not become soggy.
Step 2: Season the Meat
Add salt, black pepper, paprika, garlic powder, onion powder, Worcestershire sauce, ketchup, and mustard to the cooked beef.
Stir everything together until the meat is evenly coated. Let the mixture cook for another 2 minutes so the flavors blend.
The filling should taste like a classic cheeseburger: savory, slightly tangy, and rich. Add diced pickles at this stage for a stronger burger-style flavor.
Step 3: Cool the Filling
Remove the skillet from the heat and let the beef mixture cool for 8 to 10 minutes.
This step is important because hot filling can soften the biscuit dough and make it harder to seal. Warm filling is fine, but it should not be steaming hot.
Once slightly cooled, stir in shredded cheese or prepare cheese cubes separately for stuffing.
Step 4: Prepare the Biscuit Dough
Open the biscuit dough and separate the biscuits.
Flatten each biscuit into a round circle using your hands or a rolling pin. Each circle should be wide enough to hold the filling, about 4 to 5 inches across.
Do not make the dough too thin, because it may tear while sealing. The center should be slightly thicker than the edges.
