Ingredients

For the Cabbage Rolls

  • 1 large green cabbage
  • 1 pound ground beef, ground chicken, or ground turkey
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 egg
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 tablespoons chopped parsley

For the Tomato Sauce

  • 2 cups tomato sauce
  • 1 cup crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar, optional
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced

For the Cheesy Topping

  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup grated parmesan cheese
  • Fresh parsley for garnish

Step 1: Prepare the Cabbage

Bring a large pot of water to a boil. Remove any damaged outer leaves from the cabbage, then carefully cut around the core with a sharp knife.

Place the whole cabbage into the boiling water. Let it cook for 3 to 5 minutes, or until the outer leaves begin to soften and loosen.

Using tongs, gently remove the softened leaves one by one. Place them on a plate or tray to cool. Continue boiling the cabbage until you have enough leaves for rolling.

You will need about 10 to 12 large cabbage leaves.

Step 2: Trim the Cabbage Leaves

Once the leaves are cool enough to handle, lay each one flat on a cutting board.

The thick stem in the center can make rolling difficult, so use a knife to carefully shave down the thick part. Do not cut all the way through the leaf.

This step helps the cabbage roll smoothly around the filling without tearing.

Step 3: Make the Filling

In a large mixing bowl, add the ground meat, cooked rice, chopped onion, minced garlic, egg, mozzarella cheese, parmesan cheese, parsley, salt, black pepper, paprika, Italian seasoning, garlic powder, and onion powder.

Mix gently with your hands or a spoon until everything is combined.

Do not overmix the filling. Mixing too much can make the meat dense instead of tender.

The rice helps absorb flavor and keeps the filling soft, while the cheese adds moisture and richness inside the rolls.
