Cheesy Taco Spaghetti

 

Instructions

1. Cook the Pasta

  • Prepare spaghetti noodles according to package instructions. Drain and set aside.

2. Sauté the Veggies & Beef

  • In a large skillet over medium-high heat, heat olive oil.

  • Add diced onions and bell pepper, cooking for 3–4 minutes until slightly softened.

  • Add ground beef and cook until no pink remains. Drain excess grease.

3. Make the Cheesy Taco Sauce

  • Return the beef to the skillet. Sprinkle in the taco seasoning.

  • Add undrained tomatoes with green chilis, beef broth, sour cream, and 2 cups cheese.

  • Stir to combine and let simmer on low, stirring occasionally until the cheese is fully melted and the sauce is creamy.

4. Combine Pasta & Sauce

  • Add the cooked spaghetti noodles to the skillet and toss until evenly coated with the cheesy taco sauce.

5. Serve & Enjoy

  • Serve hot, optionally garnished with extra shredded cheese, chopped cilantro, or a dollop of sour cream.

  • Extra Veggies: Add corn, black beans, or diced zucchini for more color and nutrition.

  • Spicy Kick: Include diced jalapeños or a dash of hot sauce.
