Cuppa Cuppa Cake: The Simple Southern Dessert That Needs Almost No Effort

There are some desserts that require layers, frosting, precise measurements, and a long list of ingredients. Then there is Cuppa Cuppa Cake—a wonderfully simple, old-fashioned dessert built around one memorable idea: a cup of this, a cup of that, and a cup of fruit.

The cake became especially well known after appearing in the 1989 film Steel Magnolias, where Dolly Parton’s character, Truvy Jones, describes her incredibly simple fruit dessert. The recipe is commonly known as Cuppa Cuppa Cake, Cuppa Cuppa Cuppa Cake, or fruit cocktail cake.

What makes this dessert special is not just its simplicity. The finished cake has a texture somewhere between a soft fruit cake and a cobbler: golden around the edges, tender in the middle, and filled with pieces of juicy fruit. It is particularly good served warm with vanilla ice cream or whipped cream.

What Makes Cuppa Cuppa Cake Different?

The traditional version uses only three main ingredients:

  • 1 cup self-rising flour
  • 1 cup granulated sugar
  • 1 cup fruit cocktail, including its juice

The fruit cocktail is important because its juice supplies the moisture needed to bring the ingredients together. Self-rising flour provides the leavening, so there is no need to separately add baking powder or baking soda.

The equal-cup measurement is also where the dessert gets its memorable name. Rather than weighing several ingredients or carefully measuring complicated ratios, you simply remember the basic formula: one cup of flour, one cup of sugar, and one cup of fruit cocktail with its juice.

Ingredients

For a small 8-inch square cake, you will need:

  • 1 cup self-rising flour, about 120 g
  • 1 cup granulated sugar, about 190–200 g
  • 1 cup canned fruit cocktail, undrained, including the juice
  • Butter, for greasing the baking dish
  • Whipped cream or vanilla ice cream, for serving

If you do not have self-rising flour, you can make a substitute by combining 1 cup of all-purpose flour with about 1½ teaspoons of baking powder and ¼ teaspoon of salt.

Step-by-Step Method

Step 1: Prepare the Oven

Begin by preheating your oven to 350°F (175–180°C).

This is an important first step because the batter should go into a properly heated oven immediately after mixing. A fully preheated oven helps the self-rising flour begin working as soon as the cake starts baking.

Step 2: Prepare the Baking Dish

Lightly butter an 8-inch square baking dish.

A smaller baking dish helps the batter remain thick enough to produce a soft, substantial cake rather than spreading into an overly thin layer. Several versions of the recipe recommend an 8-inch square dish for the basic quantity.

Step 3: Measure the Fruit Cocktail Correctly

This is one of the most important details in the entire recipe.

Open the can of fruit cocktail and do not drain it. Stir the fruit and liquid together before measuring. Then measure one full cup of the mixture.

The juice is not something to throw away—it is part of the recipe. It provides the liquid necessary to create the batter, while the fruit contributes sweetness, texture, and bursts of flavor throughout the cake.
