What Is Garbage Bread?

Garbage Bread is essentially a stuffed bread roll made with pizza dough or bread dough. The dough is filled with savory ingredients, rolled tightly like a giant stromboli, then baked until crispy and golden brown.

The recipe became popular because it is easy, budget-friendly, and perfect for using leftovers. You can make endless variations depending on what you have available in your kitchen.

Some common fillings include:

  • Ground beef
  • Sausage
  • Bacon
  • Pepperoni
  • Onions
  • Bell peppers
  • Cheese
  • Mushrooms
  • Jalapeños

The result is a crispy crust with a warm, cheesy, flavorful center.

Ingredients

For the Bread

  • 1 pound pizza dough or refrigerated bread dough
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

For the Filling

  • 1 pound ground beef or Italian sausage
  • 6 slices bacon, cooked and crumbled
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ½ cup cooked mushrooms (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For Brushing

  • 1 egg, beaten
  • 1 tablespoon melted butter

Kitchen Tools Needed

Before starting, gather these kitchen tools:

  • Large skillet
  • Baking sheet
  • Parchment paper
  • Rolling pin
  • Mixing spoon
  • Sharp knife

Step-by-Step Method

Step 1: Prepare the Filling

Heat a large skillet over medium heat. Add the ground beef or sausage and cook until browned. Break the meat apart with a spoon as it cooks.

Once the meat is fully cooked:

  • Drain excess grease
  • Add diced onions and bell peppers
  • Cook for about 4–5 minutes until softened

Season the mixture with salt, pepper, garlic powder, and Italian seasoning.

Remove the skillet from heat and allow the filling to cool slightly.

Step 2: Cook the Bacon

Cook the bacon in a skillet until crispy. Transfer it to a paper towel-lined plate to remove extra grease, then crumble it into small pieces.

The bacon adds smoky flavor and crunchy texture to the bread.

Step 3: Prepare the Dough

Preheat your oven to 375°F (190°C).

Lightly flour a clean surface and roll the pizza dough into a large rectangle about ¼ inch thick.

Try to keep the dough even so it bakes uniformly.

Step 4: Add the Fillings

Spread the cooked meat mixture evenly over the dough, leaving about 1 inch of space around the edges.

Sprinkle:

  • Bacon pieces
  • Mozzarella cheese
  • Cheddar cheese
  • Mushrooms if using

Do not overfill the dough or it may split during baking.

Step 5: Roll the Bread

Starting from one long side, carefully roll the dough tightly into a log.

Pinch the seams and ends closed to keep the filling inside while baking.

Place the rolled bread seam-side down on a parchment-lined baking sheet.

Step 6: Brush and Season

Brush the top of the bread with beaten egg. This helps create a shiny golden crust.

Then brush lightly with melted butter and sprinkle a little extra Italian seasoning on top for added flavor.
