Lebkuchen Bars: A Traditional German-Inspired Spiced Holiday Dessert
Lebkuchen Bars are a delicious twist on the classic German Christmas cookie known as Lebkuchen. These bars combine the warm flavors of gingerbread, honey, cinnamon, cloves, nutmeg, and nuts into a soft, moist dessert that is easy to slice and share.
Unlike traditional rolled cookies, Lebkuchen Bars are baked as one large sheet and cut into squares or rectangles. They have a tender, cake-like texture with a deep spiced flavor and are often finished with a sweet glaze or chocolate coating.
Perfect for Christmas gatherings, holiday cookie trays, afternoon tea, or homemade gifts, these bars bring the comforting aroma of traditional European baking into a simple recipe.
What Makes Lebkuchen Bars Special?
Lebkuchen is a centuries-old German holiday treat that dates back to medieval times. Originally created by monks in Franconia, it became famous for its combination of honey, spices, and nuts.
Lebkuchen Bars keep the traditional flavors but simplify the process. Instead of shaping individual cookies, the dough is spread into a baking pan, baked, glazed, and sliced.
The result is:
- Soft and chewy texture
- Warm holiday spices
- Rich honey sweetness
- Nutty flavor
- Beautiful glossy topping
These bars taste even better after resting because the spices become stronger and more balanced.
Ingredients
For the Lebkuchen Bars
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground cloves
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground allspice
- ¾ cup honey
- ½ cup brown sugar
- ½ cup unsalted butter
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup milk
- 1 cup finely chopped almonds or hazelnuts
- ½ cup candied orange peel, finely chopped (optional)
For the Glaze
- 1 cup powdered sugar
- 2–3 tablespoons lemon juice or milk
- ½ teaspoon vanilla extract
Optional Chocolate Topping
- 1 cup dark or semi-sweet chocolate
- 1 tablespoon butter or coconut oil
Step 1: Prepare the Baking Pan
Preheat your oven to:
350°F (175°C)
Line a 9×13-inch baking pan with parchment paper, leaving some extra paper hanging over the edges. This makes it easier to remove the bars after baking.
Lightly grease the parchment paper with butter or cooking spray.
A properly prepared pan helps the bars bake evenly and prevents sticking.
Step 2: Mix the Dry Ingredients
In a medium bowl, combine:
- Flour
- Baking powder
- Baking soda
- Salt
- Cinnamon
- Ginger
- Cloves
- Nutmeg
- Allspice
Whisk everything together until the spices are evenly distributed.
This step is important because Lebkuchen depends on balanced spices. Mixing them with the flour prevents strong pockets of cinnamon or cloves in the finished bars.
Step 3: Prepare the Honey Mixture
Place the butter, honey, and brown sugar in a saucepan.
Heat over low heat, stirring occasionally until the butter melts and the sugar dissolves.
Do not boil the mixture. The goal is only to create a smooth, warm syrup.
Remove from heat and allow it to cool for a few minutes.
The honey gives Lebkuchen its traditional sweetness and helps create its moist texture.
Step 4: Combine the Wet Ingredients
In a large mixing bowl, whisk the eggs until lightly beaten.
Add:
- Vanilla extract
- Warm honey-butter mixture
Mix until smooth.
Make sure the honey mixture is not extremely hot before adding the eggs, because too much heat can cook the eggs and create lumps.
Step 5: Make the Batter
Gradually add the dry ingredients into the wet mixture.
Stir gently until combined.
Do not overmix. Too much mixing can make the bars dense instead of soft.
Fold in:
- Chopped almonds or hazelnuts
- Candied orange peel (if using)
The batter should be thick, fragrant, and slightly sticky.
Step 6: Spread the Batter
Pour the batter into the prepared baking pan.
Use a spatula to spread it evenly into the corners.
Because the batter is thick, take your time smoothing the surface.
An even layer ensures all bars have the same texture after baking.
