Lemon Pistachio Pound Loaf

There is something especially satisfying about a homemade pound loaf: a tender, buttery crumb, a lightly golden crust, and a slice that feels rich without being overly complicated. This Lemon Pistachio Pound Loaf takes that classic idea and gives it a bright, nutty twist. Fresh lemon brings a refreshing citrus flavor, while finely chopped pistachios add a delicate crunch and a naturally earthy richness.

Finished with a simple lemon glaze and a scattering of pistachios, this loaf is beautiful enough for a brunch table but easy enough to make for an afternoon treat. The best part is that the lemon flavor continues to develop as the loaf cools, making every slice fragrant and flavorful.

Why You’ll Love This Loaf

  • Bright and refreshing: Fresh lemon zest and juice give the loaf a lively citrus flavor.
  • Nutty and buttery: Pistachios add subtle richness and texture.
  • Tender crumb: The combination of butter, eggs, and sour cream keeps the loaf soft.
  • Easy to prepare: No mixer attachments or complicated techniques are required beyond basic cake-making.
  • Great for sharing: It works beautifully for breakfast, brunch, afternoon tea, or dessert.

Ingredients

For the Lemon Pistachio Loaf

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tablespoon finely grated lemon zest
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon vanilla extract
  • ½ cup sour cream or plain Greek yogurt
  • ½ cup shelled pistachios, finely chopped

For the Lemon Glaze

  • 1 cup powdered sugar
  • 2–3 tablespoons fresh lemon juice
  • 1 teaspoon finely grated lemon zest

For Garnishing

  • 2–3 tablespoons chopped pistachios
  • A little additional lemon zest, if desired

Step-by-Step Method

Step 1: Prepare the Pan

Preheat your oven to 350°F (175°C).

Grease a standard 9 × 5-inch loaf pan and line it with parchment paper, leaving some paper hanging over the long sides. The parchment makes it much easier to lift the finished loaf from the pan without damaging its delicate crust.

If you’re using a slightly smaller loaf pan, avoid filling it more than about two-thirds to three-quarters full.

Step 2: Combine the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, and salt.

Mixing these ingredients separately helps distribute the baking powder evenly throughout the flour. Set the bowl aside while you prepare the batter.

Step 3: Cream the Butter and Sugar

Place the softened butter and granulated sugar in a large mixing bowl.

Beat them together until the mixture becomes noticeably lighter and fluffy, about 2–3 minutes with an electric mixer. This step incorporates air into the butter, helping create a lighter pound loaf.

Don’t rush this step, but avoid overmixing once the mixture is properly creamed.

Step 4: Add the Eggs

Add the eggs one at a time, mixing well after each addition.

Adding them gradually helps the batter remain smooth and evenly emulsified. If the mixture looks slightly curdled after adding the eggs, don’t worry; it will come together when the dry ingredients are incorporated.
