  • 8 slices bacon, chopped
  • 1 medium onion, finely sliced or diced
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 4 oz cream cheese, softened
  • ½ cup milk or heavy cream
  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese, optional
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt to taste

For Topping

  • Extra shredded cheddar cheese
  • Crispy bacon pieces
  • Chopped green onions
  • Fresh parsley, optional
  • Extra sour cream for serving

Step 1: Prepare the Baking Dish

Preheat your oven to 375°F / 190°C.

Grease a 9×13 inch baking dish with butter or non-stick cooking spray. This prevents the pierogies and cheese from sticking to the bottom.

Set the dish aside while you prepare the filling and sauce.

Step 2: Cook the Bacon

Place the chopped bacon in a skillet over medium heat.

Cook until the bacon becomes crispy and golden. Stir occasionally so it cooks evenly.

Once cooked, remove the bacon with a slotted spoon and place it on a paper towel-lined plate.

Keep about 1 to 2 tablespoons of bacon grease in the skillet. This will be used to cook the onions and add extra flavor.

Step 3: Sauté the Onion and Garlic

Add the butter to the skillet with the bacon grease.

Once melted, add the sliced or diced onion. Cook for 5 to 7 minutes, stirring often, until the onion becomes soft and lightly golden.

Add the minced garlic and cook for another 30 seconds.

Do not let the garlic burn. It should become fragrant, not dark.

The onions and garlic create the savory base of the casserole and give the dish a homemade flavor.

Step 4: Make the Creamy Sauce

In a mixing bowl, combine the sour cream, softened cream cheese, milk or heavy cream, black pepper, garlic powder, onion powder, and a small pinch of salt.

Whisk or stir until smooth.

If the cream cheese is too firm, microwave it for 10 to 15 seconds to soften it before mixing.

The sauce should be creamy and spreadable, but not too thick. If it feels too heavy, add a little more milk.
