Mongolian Ground Beef Noodles are a quick and flavorful dinner made with tender noodles, seasoned ground beef, garlic, ginger, soy sauce, brown sugar, and a glossy savory sauce. This dish is inspired by the sweet-and-salty flavor of Mongolian beef, but it uses ground beef instead of sliced steak, making it faster, easier, and more budget-friendly.

What Makes Mongolian Ground Beef Noodles Special?

This recipe is special because it gives you the flavor of takeout-style Mongolian beef in a much easier form. Ground beef cooks quickly, absorbs the sauce well, and mixes beautifully with noodles.

The sauce is the heart of the dish. Soy sauce gives saltiness, brown sugar adds sweetness, garlic and ginger bring warmth, and a little cornstarch helps the sauce coat every noodle. When everything is tossed together, the noodles become glossy, flavorful, and satisfying.

Ingredients

For the Noodles

  • 12 oz noodles, such as linguine, spaghetti, lo mein, or rice noodles
  • Water for boiling
  • 1 tablespoon salt for pasta water

For the Beef

  • 1 pound ground beef
  • 1 tablespoon oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced or grated
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes, optional

For the Mongolian Sauce

  • ½ cup low-sodium soy sauce
  • ⅓ cup brown sugar
  • ¼ cup beef broth or water
  • 2 tablespoons hoisin sauce, optional but recommended
  • 1 tablespoon oyster sauce, optional for deeper flavor
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon sesame oil

For Garnish

  • 2 green onions, sliced
  • Sesame seeds, optional
  • Extra red pepper flakes, optional

Step 1: Prepare the Noodles

Bring a large pot of water to a boil. Add salt, then add the noodles.

Cook the noodles according to the package directions until they are just tender. Try not to overcook them, because they will be tossed again with the hot sauce later.

Before draining, save about ½ cup of noodle water. This can help loosen the sauce if it becomes too thick.

Drain the noodles and set them aside.

Step 2: Mix the Sauce

In a small bowl, combine the soy sauce, brown sugar, beef broth or water, hoisin sauce, oyster sauce, and sesame oil.

Stir until the brown sugar mostly dissolves.

In a separate small bowl, mix the cornstarch with 2 tablespoons of water. This creates a slurry that will thicken the sauce later.

Keeping the sauce ready before cooking is important because the beef cooks quickly.

Step 3: Brown the Ground Beef

Heat a large skillet or wok over medium-high heat. Add the oil, then add the ground beef.

Break the beef apart with a spoon or spatula. Cook for 6 to 8 minutes, or until it is browned and no longer pink.

If there is too much grease in the pan, drain most of it, but leave a small amount for flavor.

Browning the beef well gives the dish a deeper, richer taste.
