For the Mongolian Sauce

  • ½ cup soy sauce
  • ⅓ cup brown sugar
  • 1 cup beef broth or water
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon chili flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Optional Additions

  • Broccoli florets
  • Carrots
  • Mushrooms
  • Snap peas
  • Bok choy
  • Sriracha or hot sauce

Step 1: Prepare the Noodles

Bring a large pot of water to a boil.

Add a pinch of salt, then cook the noodles according to the package instructions.

Cook them until they are slightly firm (al dente) because they will continue cooking when mixed with the beef sauce.

Drain the noodles and rinse briefly with cold water if needed to prevent sticking.

Set them aside while preparing the beef.

Tip: Toss the noodles with a small amount of sesame oil after draining to keep them separated.
