There’s something deeply satisfying about a bowl of old-fashioned beef and noodles. It’s the kind of dish that feels like home—rich, hearty, and slow-cooked to perfection. This timeless recipe brings together tender beef, savory broth, and soft egg noodles into a meal that’s both simple and incredibly comforting.

Ingredients
For the beef:
- 800g–1kg beef chuck or stew meat
- 1 tablespoon oil
- Salt and black pepper (to taste)
For the broth:
- 1 medium onion, chopped
- 2–3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 liter beef broth (or more as needed)
- 1 teaspoon dried thyme
- 1 bay leaf
For the noodles:
- 250–300g egg noodles (homemade or store-bought)
Optional:
- Fresh parsley (for garnish)
- A splash of cream or butter for extra richness
Step 1: Prepare and Sear the Beef
Start by cutting the beef into medium-sized chunks if it isn’t pre-cut. Pat the pieces dry with paper towels—this helps achieve a better sear.
Heat oil in a large pot or Dutch oven over medium-high heat. Season the beef generously with salt and pepper, then add it to the pot in batches. Avoid overcrowding.
Sear each side until browned. This step builds flavor, so don’t rush it.
Once browned, remove the beef and set it aside.
Step 2: Build the Flavor Base
In the same pot, add the chopped onion, carrots, and celery. Cook for about 5–7 minutes until softened.
Add the garlic and cook for another 30 seconds until fragrant.
