1 Tbsp.Of olive oil.

1 Pound.Of lean diced beef.

1 medium-diced onion.

1 medium diced carrot.

2 or 3 diced celery stalks.

1 medium diced parsnip.

2 large garlic cloves; minced.

1 Tbsp.Of Italian seasoning.

2 bay leaves.

1 14-oz can.Of diced tomatoes.

1 Pound.Of potatoes; cubed.

3.5-oz.Of sliced green beans.

A medium-diced zucchini.

5 cups.Of beef stock.

Fresh chopped parsley.

Salt and ground black pepper.

PREPARATION:

1st Step

Put the oil in the Instant Pot and turn it to the “Sauté” setting. After adding the beef, season it with a little bit of salt and some freshly ground black pepper, and then continue to cook it for another three to four minutes until it has browned.

2nd Step

Cook the onion, carrot, celery, and parsnip together with the garlic for another two to three minutes, or until the vegetables have become somewhat softer.

3rd Step

Mix in the chopped tomatoes, beef stock, diced potatoes, diced green beans, and diced zucchini. Season with Italian spice and bay leaves.

4th Step

After you have put the lid on the Instant Pot, turn the valve to the “Seal” position. Prepare it for 15 minutes on the “High Pressure” setting.

5th Step

When the timer goes off, you should wait for the pressure to drop by itself for five minutes before turning the valve to the “Venting” position to let out the remaining pressure.

6th Step

After adjusting the spice to taste, stir in the fresh parsley, and serve with the crusty bread of your choice.
