Step 1: Prepare the Cabbage

Remove the outer leaves from the cabbage if they look tough or damaged.

Cut the cabbage in half, then cut out the hard core from the center. Slice the cabbage into thick strips or chop it into medium pieces.

Do not cut the cabbage too small because it will shrink as it cooks. Larger pieces give the dish better texture.

Rinse the cabbage well and drain it.

Step 2: Prepare the Potatoes

Peel the potatoes and cut them into medium cubes.

Try to keep the potato pieces similar in size so they cook evenly. If they are too large, they may take longer to soften. If they are too small, they may break apart too much.

Place the diced potatoes in cold water while preparing the other ingredients. This keeps them from turning brown and removes some excess starch.

Drain before cooking.

Step 3: Build the Flavor Base

Add the olive oil or bacon grease, then add the butter.

Once the butter melts, add the sliced onion. Cook for 4 to 5 minutes until the onion becomes soft and slightly golden.

Add the minced garlic and cook for another 30 seconds, stirring often.

This step is important because the onion and garlic give the dish its deep savory flavor.

Step 4: Add the Potatoes

Add the drained potatoes to the pot.

Season them with salt, black pepper, garlic powder, onion powder, smoked paprika, and Cajun seasoning if using.

Stir well so the potatoes are coated in the buttery onion mixture.

Cook the potatoes for about 5 minutes before adding the cabbage. This gives them a head start because potatoes take longer to soften than cabbage.
