Instructions
- Prepare the Beef
- Marinate the beef slices with 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and a pinch of black pepper. Let it sit for 10-15 minutes.
- Cook the Noodles
- Boil the noodles according to package instructions. Drain and set aside.
- Cook the Eggs
- Heat 1 tablespoon of vegetable oil in a large pot or wok over medium heat. Pour in the beaten eggs and gently scramble until just set. Remove from the pot and set aside.
- Sear the Beef
- In the same pot, heat another tablespoon of oil over high heat. Sear the marinated beef slices until browned but still tender. Remove and set aside.
- Sauté Aromatics
- Lower the heat to medium. Add the garlic, ginger, and onion to the pot. Sauté until fragrant, about 2-3 minutes.
- Create the Broth
- Add the diced tomato, chili paste, and remaining soy sauce. Stir well. Pour in the chicken or beef broth and bring to a simmer.
- Combine Ingredients
- Add the cooked noodles, beef slices, and scrambled eggs back into the pot. Stir gently to combine and allow everything to heat through, about 2-3 minutes.
- Season and Serve
- Taste the broth and adjust seasoning with salt and pepper if needed. Ladle the noodles, beef, and broth into bowls. Garnish with chopped green onions and a drizzle of chili oil for extra spice.
