  • 2 teaspoons vanilla extract
  • 3–4 tablespoons heavy cream or milk
  • ½ cup finely chopped toasted pecans
  • ½ cup shredded coconut

For the Topping

  • ¾ cup shredded coconut
  • ¾ cup chopped pecans

Step 1: Toast the Pecans and Coconut

Begin by preparing the pecans and coconut that will go into and on top of the cake.

Spread the chopped pecans on a baking sheet and toast them in a 350°F (175°C) oven for about 6–8 minutes, stirring once halfway through. They should smell fragrant but should not become dark.

If desired, toast the coconut separately for about 4–6 minutes. Coconut can brown quickly, so keep a close eye on it.

Allow both ingredients to cool completely.

Why toast them? Toasting intensifies the natural flavor of pecans and gives the coconut a deeper, slightly caramelized taste.

Step 2: Prepare the Cake Pans

Grease and flour three 8-inch round cake pans.

Step 6: Alternate the Flour and Buttermilk

Add approximately one-third of the dry ingredients to the butter mixture and mix on low speed.

Follow with half of the buttermilk.

Continue alternating:

  1. Dry ingredients
  2. Buttermilk
  3. Dry ingredients
  4. Remaining buttermilk
  5. Final portion of dry ingredients

Mix only until the ingredients are incorporated.

Do not overmix. Overmixing can develop too much gluten and make the cake less tender.

Step 7: Fold in the Coconut and Pecans

Add the shredded coconut and cooled toasted pecans.

Use a spatula to gently fold them into the batter.

This keeps the cake mixture from becoming overly dense while distributing the coconut and pecans throughout each layer.

Step 8: Divide and Bake

Divide the batter evenly among the prepared cake pans.

Smooth the tops with a spatula and gently tap the pans against the counter once or twice to remove large air pockets.

Bake for approximately 22–28 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.

Try not to overbake the layers. A coconut cake should remain soft and moist.

Step 9: Cool the Cake Layers

Allow the cakes to cool in their pans for about 10 minutes.

Then carefully turn them onto wire racks and remove the parchment paper.

Let the layers cool completely before frosting.

This is important. If the cake is still warm, the frosting can melt and slide off.

Step 10: Make the Frosting

While the cake cools, prepare the frosting.

Beat the softened butter until smooth and creamy.
