Crockpot Beef Tips and Gravy: A Tender Slow-Cooked Comfort Food Recipe

Crockpot Beef Tips and Gravy is a rich, hearty, and comforting dish made with tender pieces of beef cooked slowly in a savory brown gravy. The slow cooker does most of the work, allowing the beef to become soft, juicy, and full of flavor. What Are Beef Tips?

Beef tips are small pieces of beef, usually cut from sirloin, chuck roast, stew meat, or another tender cooking cut. In this recipe, the beef is cooked low and slow until it becomes very tender.

Chuck roast or stew meat works especially well in the crockpot because slow cooking breaks down the meat and makes it soft. Sirloin tips can also be used, but they usually cook faster and have a slightly leaner texture.

Ingredients

For the Beef

  • 2 pounds beef tips, stew meat, sirloin tips, or chuck roast cut into cubes
  • 1 tablespoon olive oil or butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce

For the Gravy

  • 2 cups beef broth
  • 1 tablespoon tomato paste, optional
  • 1 tablespoon soy sauce, optional for deeper flavor
  • 1 packet brown gravy mix, optional for extra richness
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons butter, optional for finishing

Optional Add-Ins

  • 1 cup sliced mushrooms
  • ½ cup chopped carrots
  • ½ cup celery
  • 1 bay leaf
  • Fresh parsley for garnish

Step 1: Choose and Cut the Beef

Start by choosing the right beef. Chuck roast is excellent if you want very tender, rich beef tips. Stew meat is convenient because it is already cut, but you may need to trim away extra fat or large tough pieces. Sirloin tips are leaner and slightly more refined.

Cut the beef into medium bite-sized cubes. Try to keep the pieces similar in size so they cook evenly.

Pat the beef dry with paper towels. This helps the meat brown better if you choose to sear it before slow cooking.

Step 2: Season the Beef

Place the beef pieces in a large bowl.

Season with salt, black pepper, garlic powder, onion powder, paprika, and dried thyme.

Toss the beef until all pieces are evenly coated.

This step gives the meat a good base flavor before it goes into the crockpot.

Step 3: Sear the Beef for Extra Flavor

This step is optional, but highly recommended.

Heat olive oil or butter in a large skillet over medium-high heat. Add the beef pieces in batches and brown them on the outside.

Do not overcrowd the pan. If too much beef is added at once, it will steam instead of brown.

Sear each batch for 1 to 2 minutes per side. The beef does not need to cook through at this stage. You only want to create a browned outer layer.

Browning the beef adds deeper flavor to the final gravy.
