No-Bake Pineapple Cream Pie: A Cool, Creamy Dessert Bursting With Tropical Flavor

When you want a dessert that feels special without spending hours in the kitchen, No-Bake Pineapple Cream Pie is an excellent choice. It combines a buttery graham cracker crust with a smooth, creamy pineapple filling for a dessert that is refreshing, lightly tangy, and wonderfully easy to prepare.

Unlike traditional pies that require a hot oven, this recipe comes together with simple mixing, folding, and chilling. The pineapple adds a bright tropical flavor, while the creamy filling gives every slice a soft, silky texture. It is especially delicious on warm days when you would rather keep the oven turned off.

Why You’ll Love This No-Bake Pineapple Cream Pie

This pie is more than just an easy dessert. It has several qualities that make it ideal for family gatherings, potlucks, celebrations, and casual weekend treats.

  • No oven required: Everything is prepared without baking.
  • Simple ingredients: You only need a handful of familiar ingredients.
  • Make-ahead friendly: The pie needs time to chill, making it convenient to prepare in advance.
  • Refreshing flavor: Pineapple gives the creamy filling a bright, fruity taste.
  • Smooth and creamy texture: The filling sets into a soft, sliceable consistency.
  • Easy to customize: You can add coconut, toasted nuts, cherries, or extra pineapple for your own variation.

Ingredients You’ll Need

For the Crust

  • 1 ½ cups finely crushed graham crackers
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • A small pinch of salt

A store-bought graham cracker crust can also be used if you want to make the preparation even faster.

For the Pineapple Cream Filling

  • 1 can (20 ounces) crushed pineapple, preferably in juice
  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar, for whipping the cream

Optional Toppings

  • Whipped cream
  • Pineapple chunks or small pineapple wedges
  • Toasted coconut
  • Maraschino cherries
  • Finely chopped pecans or walnuts
  • A little grated lime zest

Step 1: Prepare the Pineapple

The pineapple needs to be drained very well before it goes into the filling. This is one of the most important steps in the recipe because excess liquid can make a no-bake pie filling too loose.

Place the crushed pineapple in a fine-mesh strainer and press it gently with the back of a spoon to remove as much juice as possible. Let it drain for several minutes.

For an especially firm filling, you can transfer the drained pineapple to a clean paper towel and gently blot away additional moisture.

Set the pineapple aside while you prepare the crust.

Step 2: Make the Graham Cracker Crust

Place the graham cracker crumbs in a medium bowl. Add the melted butter, sugar, and pinch of salt.

Stir until everything is evenly combined. The mixture should resemble damp sand and hold together when gently pressed.

Transfer the mixture to a 9-inch pie dish.

Using the bottom of a measuring cup or the back of a spoon, firmly press the crumbs across the bottom of the dish and slightly up the sides. Try to create an even layer so the crust holds together when sliced.

Place the crust in the refrigerator for at least 20–30 minutes while you prepare the filling.

Tip for a Better Crust

Press the crust firmly, particularly around the edges. A loosely packed crust may crumble when you cut the finished pie.

Step 3: Beat the Cream Cheese

Place the softened cream cheese in a large mixing bowl.

Beat it with an electric mixer until it becomes smooth and creamy. Add the powdered sugar and vanilla extract, then continue mixing until the mixture is completely smooth.

Scrape down the sides of the bowl as needed.

Using softened cream cheese is important here. Cold cream cheese can leave small lumps in the filling, while properly softened cream cheese blends into a much smoother mixture.

Step 4: Add the Pineapple

Add the thoroughly drained crushed pineapple to the cream cheese mixture.

Fold it in gently with a spatula until the pineapple is distributed throughout the mixture.

Avoid aggressively mixing at this stage. You want the pineapple to remain evenly dispersed rather than breaking down completely into the creamy base.

Taste the mixture if desired. If you prefer a slightly brighter flavor, a small amount of lime zest can be added.

Step 5: Whip the Heavy Cream

Pour the cold heavy whipping cream into a separate chilled bowl.

Beat it with an electric mixer until it begins to thicken. Add the remaining powdered sugar and continue beating until medium-stiff peaks form.

The whipped cream should be thick enough to hold its shape but still look smooth and creamy. Be careful not to overbeat it, because excessive mixing can make the cream grainy.

Why Whip the Cream Separately?

Whipping the cream on its own creates air bubbles that give the pie filling its light, fluffy texture. Folding the whipped cream into the pineapple mixture rather than mixing it aggressively helps preserve that airy structure.
