Step 1: Choose and Prepare the Potatoes

Start by selecting firm potatoes without soft spots or green areas.

Russet potatoes create a classic crispy texture because they contain more starch, while Yukon Gold potatoes provide a naturally buttery flavor and creamy interior.

Wash the potatoes thoroughly under cold water to remove dirt.

You can peel the potatoes if you prefer a smoother texture, but leaving the skin on adds extra flavor, nutrients, and crispiness.


Step 2: Slice the Potatoes Evenly

Using a sharp knife, slice the potatoes into round pieces about:

¼ inch (0.5 cm) thick

Uniform slices are important because they allow all pieces to cook at the same rate.

If some slices are very thin, they may burn before thicker pieces become tender.

For a more rustic style, slightly thicker slices can be used, but cooking time may need to be increased.


Step 3: Soak the Potato Slices (Optional but Recommended)

Place the sliced potatoes into a bowl of cold water.
