Fried Grits Cakes: A Crispy Southern Comfort Classic

Fried grits cakes are a delicious way to transform leftover or freshly cooked grits into something crisp on the outside, creamy on the inside, and deeply satisfying. Popular in Southern U.S. cuisine, these golden cakes are often served at breakfast or brunch, but they also work beautifully as a side dish or appetizer.

The magic of fried grits cakes lies in contrast: a crunchy crust formed in a skillet against a soft, savory interior. Once you master the basic method, you can customize them with cheese, herbs, or spices.

Ingredients You’ll Need

This recipe makes about 8–10 small cakes:

  • 2 cups cooked grits (cooled and set)
  • 1 cup water or milk (for cooking grits, if starting fresh)
  • 1 cup shredded cheese (cheddar is classic, optional but recommended)
  • 1–2 tablespoons butter (for richness)
  • Salt and black pepper to taste
  • 1 egg (helps bind the mixture)
  • 1/3 cup all-purpose flour or cornmeal (for structure)
  • Oil for frying (vegetable or canola)

Optional add-ins:

  • Chopped scallions or chives
  • Crumbled bacon
  • Garlic powder or paprika
  • Hot sauce for heat

Step-by-Step Method

Step 1: Cook the Grits

If you don’t already have leftover grits, start here.

  1. Bring water or milk to a boil.
  2. Slowly whisk in the grits to avoid lumps.
  3. Reduce heat and simmer, stirring frequently.
  4. Cook until thick and creamy (about 15–25 minutes depending on type).
  5. Stir in butter, salt, pepper, and cheese if using.

The mixture should be thick enough to hold its shape when cooled.

Step 2: Chill and Set

This step is essential.

  1. Pour the cooked grits into a greased baking dish or loaf pan.
  2. Smooth the top evenly.
  3. Cover and refrigerate for at least 2–4 hours, or overnight.

The grits will firm up into a sliceable block, which is what allows them to fry properly.

Step 3: Shape the Cakes

  1. Remove the set grits from the dish.
  2. Cut into squares, rectangles, or use a round cutter for uniform cakes.
  3. Lightly dust each piece with flour or cornmeal to help crisp the exterior.
