Chinese egg rolls are one of the most popular appetizers in Chinese-American cuisine—crispy on the outside, savory and juicy on the inside, and perfect with sweet chili sauce, soy sauce, or duck sauce. While they look like restaurant food, they’re actually very easy to make at home once you understand the technique.
Below is a step-by-step guide that breaks everything down clearly so you can get perfectly crispy egg rolls every time.
🥢 What Are Egg Rolls?
Egg roll are deep-fried rolls made with a thin wheat wrapper filled with a savory mix of vegetables, meat, or both. The most common filling includes cabbage, carrots, garlic, and ground pork or chicken.
The key difference between egg rolls and spring rolls is the wrapper: egg roll wrappers are thicker and fry up extra crispy with bubbles on the surface.
🧾 Ingredients You Need
For the filling:
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 200g ground pork or chicken (optional but traditional)
- 2 cloves garlic (minced)
- 1 small onion (finely chopped)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional but adds depth)
- 1 tsp sesame oil
- Salt and pepper to taste
- 1 tsp cornstarch (helps absorb moisture)
For wrapping:
- Egg roll wrappers
- 1 egg (beaten, for sealing)
For frying:

Step 1: Prepare the filling
Heat a pan over medium heat and add a small amount of oil.
If using meat, cook the ground pork or chicken first until browned.
Then add:
